Sweet and Sour Meatloaf

Do yourself a favor and make this. Oh man did the Ranks love, love, love it!

SWEET AND SOUR MEATLOAF
1 lb ground beef

1/2 lb ground pork

1/2 cup crushed corn tortilla chips

salt and pepper

1 large egg

1 can of diced tomatoes (I chopped up my own- I’m such a cutting edge chef)

1/4 cup vinegar

1-1.5 teaspoon dried mustard

drizzle of molasses (optional)

1/4 of a bell pepper diced (I used red)

1/2 of an onion chopped up

Directions:

Preheat the oven to 350 degrees. Combine ground beef, ground pork, egg, tortilla chip crumbs, salt, and pepper. Some may also want to drizzle a very small amount (!) of molasses into the meat mixture. Form a loaf with the meat mixture in a 9 X 11 baking dish. In a separate bowl, combine diced tomatoes, dried mustard, vinegar, onion and diced pepper. Pour the tomato mixture over the loaf. I then sprinkle on a bit more salt and pepper. Cook in the oven until a meat thermometer reaches 160 degrees- about an hour. (Mine actually only cooked for about 20 minutes. Not sure if it was because of my pan dimensions, or a miscalculation on Farenheit to Celcius).  Let stand 10 mins. and serve with sauteed potatoes and carrots. Enjoy!
