Stuffed Bell Peppers

Well, I don’t know about in the States, but I’ve been able to find bell peppers for extremely reasonable prices as of late. I bought a three-pack with orange, yellow and red bell peppers for less than $3. Usually yellow and orange peppers are pretty pricey, so I snatched those babies up and made stuffed bell peppers for dinner. It was a very simple and cheap meal to prepare. Adapted from this recipe. Yum, yum, yum, yum, yum!

Stuffed Peppers
6-8 sweet bell peppers (green, orange, red or yellow)
2 (4 oz.) cans diced green chiles; I found serrano here so that’s what I used
1 pound ground turkey
1 cup cilantro, finely chopped
1 ½  cup onion, finely chopped

2 cups cooked brown rice seasoned with salt, cumin and cayenne pepper

4 diced tomatoes
2 teaspoons cumin
1 teaspoon chili powder
2 teaspoons kosher salt

  1. In a medium sized bowl mix diced chiles with turkey, cilantro, onion, cumin, tomatoes, rice, chili powder and salt
  2. Cut the tops off of the peppers and set aside
  3. Place peppers in an 11 by 7 inch pyrex baking dish
  4. Stuff the peppers with the turkey mixture; place tops on peppers to close; place any leftover mixture in pan to cook with peppers
  5. Bake at 350° for 1 hour
  6. Serve with sour cream and chips and guacamole
